Graham's Favourite Evening Snack - Roasted Chilli Pumpkin Seeds

"It's 8pm and I fancy something to nibble on.... Mmmmmm, what shall I have?"

How many times do you have that munchie feeling during the evening? For me, it is almost every evening...lol! Tonight being no exception. One of my favourite snacks is Roasted Pumpkin Seeds.

Roasted Chilli Pumpkin Seeds

The recipe for this is quite simple, so I will not send you to sleep with countless photographs. All you need is some Olive Oil, salt and a bag of Pumpkin Seeds. I like a bit of a kick to pumpkin seeds, so I have substituted Olive Oil with Chilli Oil and I also use some chilli flakes. Both of these items are optional.

The first step it to cover a baking tray with foil. Then spread the pumpkin seeds over the foil base. Lightly drizzle some olive oil (chilli oil) over the seeds, then season with salt (and chilli flakes if desired). The final stage before cooking is to move the seeds around the baking tray so that they get covered with the oil and seasoning.

Pre-heat your oven to a medium/high heat and then place the baking tray into the middle of the oven.

After 10 minutes, take a look at the seeds. They should be turning a golden brown colour. Give them a stir with a spatula (be careful, they are exceedingly hot!). If they are still quite green, then leave them a couple more minutes.

Once they have turned a golden brown, remove them from the oven and pour them onto several sheets of kitchen paper to soak up the oil. You may need to repeat this process several times to remove the excess oil.

Pour the seeds into a serving bowl. Finally , lightly sprinkle a few grains of rock salt over the top.

So that is my favourite munchie, when sitting in front of the TV enjoying a good film.

Pumpkin seeds aren't a favourite of mine by any means lol. Just do not like the taste of them.

However, I do tend to get the munchies most nights. If I can be bothered, I might make Poached eggs on toast, just something light and easy. Other nights I'll either reach for the bag of Grapes that are ALWAYS in my fridge, or if I fancy something different, I also love Salted Cashew nuts :D

I'm more of a savoury person than a sweet person, but cheesecake is my undoing. If and when I'm lucky enough to have that in my fridge, nothing else even gets a look in LOL!

Whoo hoo pumpkin seeds are so yummy. Although I've never tried them with chilli powder, or even oil for that matter. I just simply salt mine lightly and toss 'em in the oven. I'll be sure to remember this recipe once a pumpkin comes my way again. :)

Hey chica, you must try it with chilli.... (use chilli flakes instead of powder if you can). I have never tried them just roasted... I'll give it a go.

I never tried pumpkin seeds. Can you imagine that I'm actually drooling right now?! Ha ha! I think it's because they looked so goldy browny that I feel like to munch them all!! :D

I have never seen anyone make roasted pumpkin seeds look so absolutely mouth watering. My word, they looked good. You don't happen to have any left do you?? :) :) I too love them. I garden so I sometimes save the seeds and roast them if I have time. Will have to try the chili, especially here in the southwest, USA where chili peppers hang from every front door.

I was trying to think of other snakes I like.

* Apple slices with crunchy peanut butter on it. (the REAL kind of peanut butter)

* Celery with peanut butter and raisins on it.

* I also make a tangy spicy tofu dip that ANYONE will eat....even die hard "tofu haters" beg for the recipe...but I'm probably going to market that one...so it's a secret :) until it's marketed. If I decide not to market I shall shout it from the roof tops. :)

I know there are other things but they just won't pop in my head right now.

Anyway, also wanted to tell you that I've so enjoyed your site and your profound and thoughtful comments in the discussion the other day. They were very refreshing. Thank you for that. It made my day. And boy, could I relate about being in nature.

What a great recipe. Here in Sunflower seeds are the big thing, I might try cooking them the same way and see how they turn out.

I absolutely love roasted pumpkin seeds and they just aren't the same if you buy them. I've never tried the chili oil but also love the "kick" so I will give that a try. I crave this kind of stuff late at night when watching movies while my husband craves ice cream.

Never heard of it before, sounds interesting and looks really tasty! Then, we're not much fore eating pumpkins at all here in Sweden. I really don't know why. It's just haven't been in our traditions.

My snacks is ordinary olives, green or black, which is not particular Swedish either :-)

I can see the slogan now: Eat right - Eat Ettridge! Okay, okay...I know tacky and that. But it does have a certain ring to it.
